I'm wanting a normal muffin recipe that I can add my own stuff to for flavoring, like berries and what not.
I've got flour(all purpose and wheat), sugar(white and brown), b. powder, b. soda, salt, veg and olive oils, eggs, couple of spices(all I know is I don't have nutmeg-grrr). I can see if I have other things but thats a start. XD
I've been looking online and found a jam one that looks good but I'm iffy on that one right now.
EDIT: I don't have a sifter either...

Cinnamon Streusel Coffeecake
Topping: 1/4 cup KRETSCHMER® Wheat Germ, any flavor 1/4 cup chopped pecans (optional) 3 tablespoons all-purpose flour 2 tablespoons granulated sugar 1/4 teaspoon ground cinnamon 1 1/2 tablespoons margarine or butter, chilled and cut into pieces Cake: 1 1/2 cups all-purpose flour 1/2 cup KRETSCHMER® Wheat Germ, any flavor 1/2 cup granulated sugar 1 tablespoon baking powder 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1 cup skim milk 1/4 cup margarine or butter, melted 1 large egg or 2 large egg whites
1. Heat oven to 350°F. Spray 9-inch round cake pan with cooking spray. 2. For topping, combine dry ingredients in small bowl; mix well. Cut in margarine with pastry blender or two knives until mixture is crumbly; set aside. 3. For cake, combine flour, wheat germ, sugar, baking powder and spices in large bowl; mix well. 4. Add combined milk, margarine and egg all at once; stir just until dry ingredients are moistened. (Do not overmix.) 5. Spoon batter into pan; sprinkle with topping. 6. Bake 35 minutes or until wooden pick inserted in center comes out clean. Cool 15 minutes in pan on wire rack. Serve warm.
Makes 8 servings.
Nutrition Information: 1/8 of recipe. Calories 290, Total Fat 10g, Saturated Fat 2g, Cholesterol 25mg, Sodium 250 mg, Total Carbohydrates 43g, Dietary Fiber 2g, Protein 8g. (13% calories from fat)

This sounds like a good recipe. It's similar to the one I use. It's a plain neutral muffin recipe. You just add all the added stuff you want. Just make sure you don't end up with too runny of muffins.
2 c. flour 3 tsp. baking powder 1/2 tsp. salt 1 tbsp. sugar 1 egg 1 c. milk 2 tbsp. shortening
Mix and sift the dry ingredients. Combine the milk and well beaten egg. Add gradually to the dry ingredients, stirring well. Add melted fat. Grease and fill muffin pans 2/3 full. Bake about 25 minutes at 425 degrees. Yields 12 medium sized muffins.
As a personal note with baking. if any recipe has baking soda and salt replace the soda with baking powder. It makes it less salty.

I don't have a sifter. XD *hangs head in shame* If you have a strainer or tea strainer it will work. All a sifter does is make everything finer and less clumpy.

Just make sure while you add all the ing. make sure they are blended will.. Just quickly whisk with a fork. EDIT: whisk the stuff it says to sift with a fork.
